Making breakfast special Hi friends, There’s nothing like waking up to sunshine on a chilly Spring morning. My bedroom fills with warm sunlight and I can hear the birds chirping over the Brooklyn traffic. It makes me want to get out of bed, make myself a special breakfast, and enjoy the day. What’s a ‘special breakfast’, you ask? It’s more than toast withscrambled eggs, but it’s also not quitebrunch. It should be something you already enjoy, with some flair. Think hand-whipped cream with frozen waffles or yogurt withhomemade lemon curd. Small things that’ll make all the difference in flavor, but with little effort. My breakfast usually involvespotatoes. I take fully microwaved (and semi-cooled)potatoes, tear them up into rough pieces, and toss them in plenty of heavily seasoned olive oil. I’ll let it all crisp up in the toaster oven while I make two eggs, usually fried but sometimespoached. I dress everything withchili crispor ketchup (usually both) and a side of fruit orbaconif I have it. When I sit down to eat it with a fork and knife, I’ll take a moment to appreciate the delicious food I made for myself. Special breakfast always makes me feel so loved and I know a good day lies ahead.
