The opportunity to tell the story of heirloom grains is always a highlight for us here at Seelbach's, thought often if when we do it is heirloom corn. Today's release comes from our friends at New York Distilling Co. Through a collaboration with Cornell University they re-discovered Horton Rye – a 17th century variety of rye native to New York. The Horton Family, farmers from central England, emigrated to and helped settle present day Rye, NY. New York Distilling Co. inherited just 10 seeds in 2010 to begin the journey to bring this lost and forgotten heirloom grain back to life. It took 5 years of harvesting and re-planting just to have enough grain to begin distillation, but now have 200 acres in perpetual crop rotation in the Finger Lakes Region of New York. \xa0 With a mashbill of 75% Horton Rye, 13% New York Corn, 12% Malted Barley, this limited release is bottled in a number of single barrel offerings. This is a bold, unique rye offering you won't want to miss. \xa0 The nose is rich, subtly spiced vanilla, warming oak, a myriad of sugar coated fruits, orange slice candies, and baking spices. The nose grows even more custardy and sweet the longer it sits out in the glass, almost like a vanilla old fashioned. The palate is a coating and enveloping roller coaster. Bold and oak forward before big dried dark fruit saturation like raisin and date, heavy toffee, almost charred marshmallow, and gripping, intense layers of spice.
