Chicken Pil Pil with Red Pepper Yuca Mash and Kale
Inspired by a trip to Valencia Spain, Chef Damian created this meal as an homage to highlight the unique spicy flavors of this region. Roasted chicken lacquered with a spicy pil pil sauce, served over a fluffy roasted red pepper yucca mash and sautéed greens.

Ingredients: Chicken Pil Pil- chicken breast, coconut oil, cayenne pepper, smoked paprika, thyme, red chili flakes. Pil Pil Sauce- parsley, chicken stock (water, celery, onions, carrots, chicken trimmings, salt, pepper), tomato paste, lemon juice, coconut oil, garlic, ghost pepper extract. Red Pepper Yuca Mash- yuca, vegetable stock (water, carrot, celery, onion, bay leaf, parsley, thyme), fire roasted pepper (red bell pepper, water), yellow onion, green onion, garlic, salt, paprika, cumin, pepper.
