Easy to make and easier to devour,this cake is a mash-up of two greats: whipped cream cake and Danish Dream Cake (a.k.a. Drømmekage). Whipped cream cake is a soft, fine-crumbed cake in which whipped cream replaces all fat and liquid for a final texture that's both light and rich. (You'll have to try it to believe it.) |

Once the cake is baked, the Drømmekage kicks in: A simple shredded coconut and brown sugar topping is spread on the surface, then the cake is returned to the oven until it's caramelized. If all of that weren't enough, there's also a ripple ofDouble Dark Cocoathroughout the cake — because if Girl Scout Samoas have taught us anything, it's that coconut and caramel need chocolate. One of the reviewers wrote that the combination of texture and flavor had them "standing at the counter and eating it right out of the pan. Twice." I couldn't have said it better myself.
